Ingredients

500g (about 4 cups) mixed mushrooms (cremini, button, or shiitake), sliced

1 medium onion, finely chopped (about 150g)

3 cloves garlic, minced (about 9g)

4 cups (960ml) vegetable or  chicken broth

2 tablespoons butter

2 tablespoons olive oil

1 teaspoon dried thyme (or 2 sprigs fresh thyme)

½ teaspoon black pepper

Salt, to taste



1 cup (240ml) heavy cream or half-and-half

2 tablespoons all-purpose flour (optional, for thickening)
Instructions


Sauté mushrooms: Heat butter and olive oil in a large pot over medium heat. Add onions and garlic, and sauté until soft and fragrant.

Add mushrooms: Stir in the sliced mushrooms and cook for 8–10 minutes, until they release their moisture and start to brown.

Season: Add thyme, salt, and pepper. Stir well.

Thicken (optional): Sprinkle in flour and stir for 1 minute to coat the mushrooms.

Add broth: Pour in the vegetable or chicken broth. Stir and bring to a simmer for 10 minutes.

Blend (optional): For a smoother soup, blend half the mixture, then return it to the pot.

Finish with cream: Reduce heat to low and stir in the heavy cream. Simmer gently for another 5 minutes — don’t boil.

Serve: Garnish with extra thyme or a drizzle of cream, and serve warm with toasted bread.
